During Season 1 of Olympus I tried recording everything I could about Seller Minions.
EDIT: Some things have changed in Season 2, but this guide should still give you a solid understanding of how Seller Minions work in-game.
Disclaimer: This content may or may not be 100% accurate to the game at any time and is especially dependent on whether or not I regularly update this content. To date, various details about minions have changed from Season 1 to Season 2, some of which may or may not be reflected in edits to this work. The purpose of this guide is to give the reader an understanding of how Seller Minions work in-game. And lastly, if something happens in-game that is not covered in this guide or is contradicted by this guide, the guide is wrong or out of date.
SECTIONS:
1. What is a Seller Minion
When residing in your inventory, a Seller Minion takes on the appearance of a Dragon Egg, however when you hover over it, it displays information about your Seller Minion, including the owner, the minion's health, and the minion's hunger.
A Seller Minion is a stationary model figure of your own character that typically fits within the space of a single block, but if there are TPS issues can stand to be two blocks tall.
Seller Minions will sell all sell-able items within any chests within their specified radius of activity for as long as they are alive (i.e. health is above 0/100). A variation of this description can be seen in Figure 1.

2. How to Use a Seller Minion
To place a Seller Minion, simply right click the seller minion on the ground where you would like it to be stationed.
After placing the Seller Minion, you should see a message in Server Chat to confirm that your minion has been placed.

Once your Seller Minion is in place, it will automatically begin to sell valid items if they are available and within range.
If you happen try placing your Seller Minion on the side of a block, you will end up placing the minion either on top of that block, or inside the block on top of the one you just clicked on. This does not cause harm to the Seller Minion.

To pick up your Seller Minion, simply hold <shift> and then <right-click> on the Seller Minion and it should appear back in your inventory like in Figure 1.
Upon successfully picking up your Seller Minion, it should reappear in your inventory and you should receive confirmation in Server Chat.

Side Note: If the Seller Minion in your inventory does not list you as the Current Owner, all you need to do is place the minion and pick it back up again and it should show you as the Current Owner.

3. GUI Pop-Up
To access the GUI Pop-Up that allows you to control the finer aspects of your Seller Minion, simply <right-click> on the minion and you should be prompted with a menu.

1. Health
To see the remaining Health of your minion, hover over the golden apple in the upper left corner of the Seller Minion GUI as seen in Figure 7.

If you are selling items very often, this could rapidly drain the Seller Minion to death. Note that healing for one Health Point can be expensive at $50,000 per Health Point healed.
EDIT:
A minion that has died will disappear and be lost forever.
2. Food
The next icon to the right of the golden apple in Figure 7, is a cooked beef icon to represent your minion's food level.

Also important, is the fact that the Seller Minion only eats cooked foods.
Try to ignore the listed Favorite Foods of the Seller Minion.
To my knowledge, there is no way you could possibly acquire fish or golden apples fast enough to feed your minion.
What should work as food instead, is cooked meats, however I found that this was not always true since mine would eat cooked beef but not cooked mutton.
My advice would be to see what meat your minion will eat, and then produce a lot of that meat.
3. Feeding your Seller Minion
There are two ways to feed your Seller Minion, manually and automatically.
To feed your Seller Minion manually, simply <right-click> on it with a piece of food that it will eat, like cooked beef, and you should receive a confirmation message in Server Chat.
